Yields 115 cookies

Ingredients

  • Butter, unsalted, softened  1 lb 8.00 oz or 2 1/2 cups
  • Brown sugar, packed  4 oz or 1/2 cup
  • Gold Medal™ Variety Muffin Mix (11544)  5 lb or 1 box
  • Water, cool  8 oz or 1 cup
  • Peaches, small diced, IQF, thawed and drained  10 oz or 1 1/2 cups
  • White chocolate chips  6 oz or 1 cup

Directions

  1. Add butter and sugar to mixer bowl with paddle attachment; mix on medium speed 2 minutes.
  2. Stop mixer, scrape bowl and paddle; add muffin mix and water.
  3. Mix on low speed 1 minute then stop mixer, scrape bowl and paddle; mix an additional 30 seconds until well blended.
  4. Add diced peaches and white chocolate chips; mix on low speed until just combined, about 20-30 seconds.
  5. Deposit dough with #40 scoop in 4x6 pattern on greased or parchment-lined full sheet pans.
  6. Bake as directed below and cool before serving.
    • Convection Oven: 325°F for 9-12 minutes
      • Rotate pans baked in convection oven one half-turn (180°) after 4 minutes of baking.
    • Standard Oven: 375°F for 12-17 minutes
