1. Scale, Mix, and Fry

Scale and mix the donut mix according the instructions on the bag. Use your thermometer to determine the correct water temperature to achieve a dough temperature of 72°F. Use your scale to weigh the water.  Let the batter rest for 15 minutes. Fry at 375°F for 55-60 seconds per side. Drain the Donuts for 60 seconds. 

2. Finish

After the donuts have cooled, dip them in the chocolate dipping icing heated to 110-115°F. 
Top with marshmallow topping. Use a kitchen torch to burn the top of the marshmallow crème to simulate a roasted marshmallow. Garnish with graham crackers dipped in melted C’est Vivant Dark Coating Chocolate.
