This summer, Insomnia Cookies is celebrating ice cream lovers and chill seekers with special duos. The late-night cookie bakery chain’s latest menu additions combine its cookies with its own premium Cookies IN Ice Cream to deliver sweet innovations.
The treats are available for a limited-time only now through Sunday, August 6:
- Classic Strawberry Shortcake –Strawberry dough mixed with white chocolate chips, strawberry bits and strawberry-infused dried cranberries
- Cheesecake Brookie –Chocolate brownie base, brown sugar dough top, mixed with cheesecake bits
- Peachy Cobbler Filled Deluxe – Brown sugar dough filled with a sweet peach filling, topped with crystal sugar and cinnamon
- Peach on Peach á la Mode – Peachy Cobbler Filled Deluxe cookie, topped with two scoops of Peaches ‘N Cheesecake ice cream and a scoop of classic vanilla ice cream
- Chocolate Covered Strawberry Cookie’wich – Two scoops of chocolate ice cream sandwiched between two classic Strawberry Shortcake cookies
- Caramel ‘N Cheesecake Sundae – Cheesecake Brookie with two scoops of Caramellionaire ice cream, topped with swirls of caramel
Additionally, Insomnia Cookies will be celebrating National Ice Cream Day (July 16) all weekend long from Friday, July 14 through Sunday, July 16. Customers will receive a free scoop of ice cream with any in-store purchase or order for local delivery.
