Cake

Ingredients

  • 3 cups all-purpose flour
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 2 sticks butter, unsalted
  • 1/3 cup sugar
  • 5 large eggs, whites only
  • 2 tsp vanilla extract
  • 1-1/2 cups whole milk
  • Food coloring

Directions

  1. Preheat oven to 350º. Grease four 9”-round cake pans (or as many 9” cake pans as you have, feel free to reuse them) with shortening, then line the bottom of each cake pan with parchment rounds.
  2. In a large bowl, combine your dry ingredients (flour, baking powder and salt). In a separate electric mixer bowl, start mixing your butter and sugar, then slowly add egg whites and vanilla until well combined.
  3. Add your dry ingredients and then the milk to the mixing bowl. Mix until well combined.
  4. Split batter evenly into four medium bowls, then add food coloring to each until desired shade is achieved. Pour each mixture into its own cake pan and place in oven. Bake until done — about 15 minutes.
  5. Let cakes cool on a wire rack, then trim the tops with a serrated knife so they’re level. Stack the colors in your desired order, spreading layers of frosting between them as you go.
  6. With a spatula, cover the outside of the cake with any remaining frosting.
