Strawberry Chocolate Chip Cake

1 cup DOVE Chocolate Baking Chips
1 2/3 cup all-purpose flour, sifted
¾ teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
½ cup butter, softened
1 cup sugar
1 egg
2 egg whites
½ cup fresh strawberries, pureed
¼ cup buttermilk
½ teaspoon vanilla extract
4-8 drops red food coloring (set to desired color)

Chocolate Frosting

1¾ cups confectioners sugar, sifted
4 tablespoons unsweetened cocoa powder
4 tablespoons butter, softened
3 ½ tablespoons evaporated milk
1 teaspoon vanilla extract


Strawberry Chocolate Chip Cake

1. Preheat oven to 350°F. Spray a cupcake pan with non-stick-floured cooking spray or line with cupcake liners.

2. Combine cake flour, baking powder, baking soda and salt. Set aside.

3. In separate bowl, combine buttermilk, strawberry puree, vanilla extract and food coloring.

4. In a stand mixer, whip butter and sugar until fluffy.

5. Mix in egg, then whites, one at a time into creamed butter and sugar mixture.

6. Alternatively add dry and wet ingredients to creamed mixture, ending with dry ingredients. Mix until smooth. Do not over mix.

7. Gently fold in ½ cup DOVE Chocolate Baking Chips.

8. Divide finished batter into muffin pan and bake for 18-22 minutes, or until internal temperature reaches 180°F.

Chocolate Frosting

9. In a medium bowl, sift confectioners sugar and cocoa together. Set aside.

10. In a large bowl, cream butter until smooth.

11. Gradually beat in sugar mixture alternately with evaporated milk.

12. Add in vanilla.

13. Beat frosting until light and fluffy. If necessary, adjust consistency with more milk or sugar.


14. Top cupcake with frosting and garnish with remaining chocolate chips and fresh strawberries.
