Cream cheese 50 lbs 
Granulated sugar 10 lbs 
Sour cream 10 lbs 
Pumpkin 24 lbs 
Brown sugar 3 lbs, 12 oz 
Eggs 10 lbs 
Cinnamon 1 lb 


Mix cream cheese, sugar and sour cream until smooth.

In another bowl, mix pumpkin, brown sugar, cinnamon and eggs. Blend thoroughly. Add to cream cheese mixture.

Bake cheesecakes at 300°F in conventional oven.
