Ingredients
Filling Base
Yoplait® ParfaitPro® Lowfat Vanilla Yogurt (16632) 4 pounds or 1 pouch
Cream cheese, softened 2 pounds or 4 cups
Bourbon Banana Filling
Bananas, overripe, peeled, cut in 1-inch pieces 2 pounds, 12 ounces or 5 1/2 cups
Bourbon 6 ounces or 3/4 cup
Blackberry Filling
Blackberries 1 pound, 4 ounces or 4 cups
Assembly
Graham cracker pie crust, 8-inch, prepared 3 pounds, 12 ounces or 10 each
Garnish
Blackberries, halved 2 pounds, 10 ounces or 7 1/2 cups
Granulated sugar 11 ounces or 1 1/2 cups
Bourbon 12 ounces or 1 1/2 cups
Service
Whipped topping, prepared 6 ounces or 2 1/2 cups
Directions
Filling Base
- Add 2 lb yogurt and the cream cheese to a mixer bowl fitted with whisk attachment.
- Mix on medium speed until smooth, about 3 minutes; stop mixer and scrape sides with a rubber spatula.
- Add remaining yogurt and mix until smooth.
- Transfer 1/3 of mixture to separate bowl for Blackberry Filling, keep remainder in bowl for Bourbon Banana Filling.
Bourbon Banana Filling
- Add bananas to mixer bowl with remaining 2/3 of Filling Base; process until thoroughly mixed.
- Slowly add Bourbon on low speed until smooth; cover and keep refrigerated until needed.
Blackberry Filling
- Add blackberries to reserved 1/3 of Filling Base mixture; process until thoroughly mixed.
- Cover and keep keep refrigerated until needed.
Assembly
- Deposit Bourbon Banana Filling evenly between the 10 pie shells.
- Deposit Blackberry Filling evenly between the 10 pie shells.
- Swirl the fillings lightly together with a knife or skewer to marble; cover and freeze overnight or until solid.
- Allow pies to sit at room temperature approx. 30 minutes to portion; slice with hot, wet knife, rinsing between each cut. Refreeze before service if needed.
Garnish
- Add halved blackberries, sugar and Bourbon to a medium bowl.
- Gently stir until mixed; cover and chill overnight.
Service
- Pipe 1/4 cup (approx. 0.1 oz) whipped topping on each slice.
- Top with 2 Tbsp Garnish (about 6 blackberry halves and some of the liquid); serve immediately.
