According to industry analyst Technomic’s recently released 2018 Soup & Salad Consumer Trend Report, consumers are ordering fewer soups and salads at foodservice establishments.
These items are trending down on menus as other, more unique options arise in the healthy eating category. Foods like roasted cauliflower dishes and poke bowls are taking the place of their more traditional counterparts on menus across the country.
“While soup and salad have traditionally served as go-to options for health-conscious guests, consumers now have a wider variety of healthy options to choose from,” says Anne Mills, senior manager of consumer insights at Technomic. “As more healthy foods become available and health definitions shift, brands will need to find new ways to differentiate soup and salad, perhaps with ethnic varieties that offer a balance of health and flavor.”
Other findings from the report indicate that while soup and salad are trending down, consumers still appreciate their nutritional value. 14% of consumers say they order salad every time they visit a restaurant, while 17% of consumers are ordering soup as a snack (up from 11% in 2015).
