Westco Deco-Whip Meringue Powder (1/35 LB)

BakeSense Palm Fry Shortening (1/50 LB)
Mix the dough according to the instructions on the bag of Westco Sup-R-Rollyrd Mix for a small batch. Use your scale to weight all the ingredients, including the water. Use your thermometer to achieve the proper temperature water. Let the dough rest 30 to 60 minutes.
Prepare desired amount of meringue according to the instructions on the bag of Westco Deco-Whip Meringue Powder.
Bundle the dough. Let it rest an additional 15 minutes. Roll out and cut.
Proof and Fry
Proof in a medium dry proof box between 90°F and 100°F. Fry at 375°F for 55-60 seconds per side in BakeSense Palm Fry Shortening.
After the donuts have cooled, slice them in half. Pipe meringue using a pastry bag with a large star tip on the top halves of the donuts. Dust with Westco Coating Sugar. Place onto paper lined baking pans and bake at at 380°F for 5 minutes or until the meringue begins to turn brown. Let them completely cool down.
Top the bottom halves with Westco Lemon Kist. Put both halves back together.
