1. Add the following ingredients to the bowl:  

Westco Gluten Free Crème Cake & Muffin Mix 5 LB
Whole Eggs 1 LB 12 oz.
Water 14 oz.

Mix 1 minute in low speed, 3 minutes in medium speed.

2. Add the following ingredients:

Oil 1 LB 8 oz.
Corn Syrup 4 oz.
Chocolate Chips 1 LB 4 oz.

Scrape and mix for 2 minutes in low speed.

3. Deposit into muffin tins and top with chocolate chips.

4. For 2-ounce muffins, in a Rack/Convection oven, bake at 320° for 30-35 minutes. If using a Reel/Conventional oven, bake at 350° for 35-40 minutes.

For larger muffins, extend the bake time by 15 minutes.
