Ingredients

Westco Extra Rich Yellow Cake Mix  (1/50 LB)
Westco Vanilla Buttercreme Icing RTU  (1/30 LB)
Westco Lemon Kist Filling  (1/38 LB)
Westco Lemon Flavor Natural  (1/GAL)  
BakeSense Mirror Neutral Glaze RTU  (15.4 LB)

Directions

Mix

Mix the batter following the directions provided on the bag of Westco Extra Rich Yellow Cake Mix for a small batch. Deposit 15 oz. of batter into an 8" round pan.

Bake

Bake at 325-360°F for 25-30 minutes.  Invert layers immediately upon removal from the oven to prevent shrinkage and maximize shelf life. After layers are completely cool freeze overnight.

Make Up

Place one layer of cake on a cardboard circle. Pipe a border around the edge and fill with Westco Lemon Kist. Place another layer of cake on top.

Lemon Buttercreme Icing

15 LB Westco Vanilla Buttercreme Icing RTU
Yellow Food Color (as desired)
1 oz. Westco Lemon Flavor Natural

Mix ingredients together on low until well blended.

Finish

Ice the entire cake with the lemon buttercream (see above). Pipe a border around the top and the design in the center of the iced cake. Garnish the sides with toasted sliced almonds. Place a lemon slice coated with BakeSense Mirror on top.

Approx. Yield: 2 - 8” double layer cakes
