Ingredients

Buttermilk Cruller Donut Mix 1/50 LB  

Super Speedee Glaze 1/50 LB   

Donut Glaze RTU 1/40 LB

 

Mix

To prepare dough, mix Westco Buttermilk Cruller Mix with water for one minute in low speed. Increase the speed to medium, and mix for two more minutes.

 

Make Fancy or Rounds Bars

For Traditional Crullers: Roll the dough to 1" thick, and cut with a 3" donut ring cutter and pull slightly into an oblong shape.

For Fancy Rounds: Roll the dough to 1" thick, and cut into rounds. With a sharp knife, score the rounds in the shape of an "X".

For Fancy Bars: Roll the dough to 1" thick, and cut into 1" x 5" bars. Score the bar down the center lengthwise.

 

Fry and Glaze

Float the rounds and bars off the frying screen, and fry at 340?F for 2 minutes on each side. Glaze the product using Westco Super Speedee Glaze or Westco Donut Glaze RTU.
