Cake made from Baker’s Request™ White Cake Mix

Celebration® Lemon Filling

Vanilla VelveTop™ Icing

Lime Curd (Scale as desired)

4 oz Butter, unsalted
7 oz Granulated Sugar
4 oz Lime Juice
3 T Lime Zest
Salt, pinch
5   Eggs, Large

Green Color (Optional)


Lime Curd

Melt butter in sauce pan on medium heat.  Remove from heat and wisk in sugar, lime juice, zest and salt.  Wisk in eggs until smooth.  Return to medium/low heat and cook for 5-10 minutes (until thick).  Do not boil.  Strain mixture through sieve and refrigerate.


Using a 3″ biscuit cutter, cut cake into circles. Layer cake, lime curd, cake, lemon filling and cake again.  Top with a swirl of Vanilla VelveTop™.  Sprinkle with granulated sugar.  If desired, garnish with fresh lemon and lime slices.
