7 Lbs American Almond® Almond Paste  
3 Lbs 8 Oz Granulated sugar
Grated orange zest from 2 oranges
1 Lb Fresh egg yolks  

For the coating

Egg whites as needed
Powdered sugar as needed



Combine the American Almond® Almond Paste, granulated sugar and grated orange zest on slow speed.

Gradually add the fresh egg yolks.  Scrape the bowl and mix until smooth on low speed.

Roll into ½-inch diameter ropes and cut them into 1-inch pieces.

Moisten hands with the egg whites and roll each piece to form a ball.

Lightly toss the balls of dough into powdered sugar to coat and place them 1½ inches apart on parchment-lined sheet pans.  Let stand two to three hours until the dough forms a crust.

Using your thumb and first two fingers, slightly pinch each piece of dough to form a rough triangle.

Bake at 380°F to 400°F  until light golden brown, approximately 10 minutes.
