Spring Cake Trends
Experts reveal some of the cake trends to look for in the spring months.
“Sustainable practices are being prioritized in our day-to-day culture, and this eco-conscious mindset is also on the rise in the wedding industry,” says Samantha Iacia, Associate Editor at WeddingWire. “Couples have long used fresh flowers to decorate their wedding cakes, but now, the difference is that the flowers become part of the dessert instead of being discarded after the cake is cut. Violets, marigolds, pansies, and even some rose varieties are types of edible flowers that couples can use to create a zero-waste wedding cake.”
Organic and Natural
“Couples who are having an outdoor wedding reception or a beautiful barn venue are loving the semi-naked cake,” says Jasmine Clouser, owner of The Couture Cakery in Tustin, California. “It’s a cake style which had minimal icing on the cake, so you can see portions of the actual cake peeking through. In keeping with the natural and organic look, it can be decorated with beautiful fresh flowers.”
Hand-painted or Buttercream Florals
“Natural looking and organic floral accents on cake will be a big trend this spring,” says Clouser. “Whether it is hand-painted florals or textured florals created in buttercream using a palette knife, this look brings true art to any wedding.”
“Bakers are looking for unique twists and compliments that will set them apart from their competition,” says Sarah Hickey, Senior Director, Insights & Market Research at Dawn Foods. “Over the last four years alone, flavors like limoncello, guava, grapefruit, and rhubarb have seen upwards of 20% growth are showing up on the menus of bakeries of all sizes.”
Flavors Tied to Colors
Diana Bernal of Rich Products offers the following spring flavors that could be trending this year: coconut, strawberries & cream, lemon cream, triple berry, and pineapple upside down cake. In terms of colors, they will be connected to the flavor being featured in the dessert, to be more natural looking and link to the main ingredient.
