In less than two months, Prince Harry of the British royal family will marry Meghan Markle at Windsor Castle in the 15th century St. George’s Chapel. The ceremony will be full of tradition, but one aspect of the wedding will be slightly less traditional.

The couple has chosen their wedding cake to be made by pastry chef Claire Ptak, who was born in Inverness, California. Ptak owns East London-based bakery Violet. Not only will this cake stand out by not being made by a Brit, but the cake will break from tradition as well.

According to the Kensington Palace, the cake will not be the traditional fruitcake, as is customary with royal weddings. Instead, Prince Harry and Meghan Markle have asked that the cake be a lemon elderflower cake, featuring the bright flavors of spring and fresh flower decorations.

Markle met Ptak when she interviewed the pastry chef for her former lifestyle blog, The Tig. Markle is a fellow Californian, born and raised in Los Angeles.

Ptak is known for her delicious buttercream icings that change seasonally. Her cakes are baked with organic flour, sugar, milk and eggs, while many of the other ingredients are organic as well. The bakery also uses Valrhona, Guittard and Callebaut chocolates, pure cane sugars, maple syrup, agave nectar and, molasses.

“I can’t tell you how delighted I am to be chosen to make Prince Harry and Ms. Markle’s wedding cake,” Ptak said in a statement. “Knowing that they really share the same values as I do about food provenance, sustainability, seasonality and most importantly flavor, makes this the most exciting event to be a part of.”
