François Payard was announced as the culinary director for Karver earlier this year.
 
Acclaimed pastry chef François Payard was recently named as the culinary director for Karver, a European restaurant with two locations in Brooklyn, New York. Payard is known for his pastries and macarons, and he is bringing his unique style to Karver’s menu. He has previously been named “Pastry Chef of the Year” by Bon Appetit and “Pastry Chef of the Year” by the James Beard Foundation.

The original Karver location opened in Brooklyn’s Sheepshead Bay last year, and the second location opened in Downtown Brooklyn in February. There is a third location set to debut in Manhattan in March.

Karver’s menu includes danishes, croissants, fruit tarts, and eclairs, as well as breakfast sandwiches that can be customized with a variety of breads. The bread options include flavors like ciabatta, everything bagel, squid ink, caramelized bacon and onion, and Kalamata olive.

“The food is exactly what I want to eat every day,” Payard says of the menu.

The bakery portion of Karver is open from 7 a.m. to 8 p.m. on Monday through Friday and 9 a.m. to 6 p.m. on Saturday. The brasserie portion is open from noon to 7:30 p.m. on Monday through Friday and from 10 a.m. to 6 p.m. on Saturday.
