The bakery is using the flavor for its Buche de Noel, also known as a Christmas sponge cake shaped like a yule log. The cake is rolled up with creamy frosting, and in this version the cake is ube-infused, filled with macapuno cream cheese, and topped with coconut buttercream.
FrankieLucy Bakeshop’s version is inspired by pastry chef Kristine de la Cruz’s Filipino heritage. The root vegetable is common in the Philippines and other Asian countries, where it gained notoriety before becoming popular abroad in the United States.
The Ube Yule Log is available at FrankieLucy Bakeshop by special order in sizes for 2-3 people for $20, 6-8 people for $50, or 14-16 people for $85.
