Just over two years ago, Jay McConville of Manasquan, New Jersey started his own pie business. After 20 years of traveling the country as a general manager Ruby Tuesday, he could not have been happier to make the change.

"I didn't love it anymore," McConville tells the Asbury Park Press. "I wanted something for me."

He used his business knowledge to get his new venture off the ground. Now, Sunburst Pie Co. is thriving behind its namesake pies, which are marked with McConville’s signature sunburst design.

"I've always done the baking, always loved making pies," McConville says about the inspiration to follow his passion into a new career. Initially, he sold fruit pies and cookies, but now his shop sells a variety of goods ranging from cream pies and scones to quiche and made-from-scratch chicken pot pies.

While he’s known as the “pie guy” around town, his shop has clearly blossomed beyond that dessert. "More and more people are realizing it's more than pie," he says of Sunburst Pie Co. The pies are a strong part of the business, however, and the shop specializes in many different kinds of pie. That includes unique combinations such as chocolate-covered banana; strawberry shortcake, which is vanilla cream, strawberries, whipped cream and crumbled vanilla bean scones; and chocolate coconut.
