A Japanese company hopes customers will “trick” themselves into eating healthy with an innovative concept.

Vegedeco Salad Café in Japan has developed the “new shape of salad” with its salads, which resemble beautiful iced-cakes but actually feature a daily recommended serving of vegetables, to give customers the appearance of a sweet treat without the guilt.

Owner Mitsuki Moriyasu designed the salads as a guilt-free alternative to baked goods. She was inspired by the idea of creating a healthy treat for her sons with food allergies. “We had homemade meals as I wanted them to eat lots of vegetables, and not take too much sugar. I decided I wanted to make something that looks cute, and also has lots of vegetables. So I made a cake — but with lots of veggies.”

The salad cakes are low-carb and gluten free, made with low-carb sponge cake made of Japanese soy flour, tofu cream, traditional Japanese ingredients such as Koji, colored with natural vegetable colors.

“It looks like a normal cake — but it’s made of only veggies. You can have it for breakfast, lunch — and it’s very suitable for dinner with wine. Each cake tastes different, depending which vegetables we use — but I would say it tastes like something you’ve never had before,” says Moriyasu.
