Léonce Blanc Blackberry Frozen Puree has a fruit to sugar ratio 90/10 and a Brix Index of 21. Every Léonce Blanc recipe is prepared with a sugar content (Brix) adapted to the fruit’s natural profile. Tart citrus fruits need a low Brix level while sweet fruits like mangos need higher Brix levels.
This frozen puree is natural, kosher, and bake-stable. It comes in 2.2 lb trays with peel-off membrane seals and lids, practical and easy to use.
