Dawn Foods, a global leader in bakery ingredients and innovation, has announced its Dawn Global Bakery Trends, which launched Sunday, May 18 at IBA, the world’s leading trade fair for the baking and confectionery industry, held in Düsseldorf, Germany. These trends offer a data-driven look at where the industry is headed and how bakers can stay ahead of shifting consumer expectations.
Through a comprehensive research project conducted by Dawn’s Global Market Research & Insights team, the company is able to provide a truly global view of the behaviors and motivations shaping bakery consumption. The team analyzed syndicated industry data from a variety of sources, then conducted proprietary research including over 2,500 consumer surveys, and made visits to hundreds of bakeries, grocery stores and foodservice establishments worldwide.
