In a world where food trends shift rapidly and burnout remains a challenge for many, Amy Emberling has cultivated a career defined by clarity, consistency, and care. As Co-Managing Partner of Zingerman’s Bakehouse in Ann Arbor, Michigan, she has helped build one of the nation’s most respected artisan bakeries—grounded in values, vision, and long-term thinking.
Emberling’s passion for baking began in childhood. As the youngest of four growing up in Nova Scotia, she became the family’s designated baker, intrigued by the transformative nature of ingredients. Though baking was a constant, her early career path explored other directions, including time in restaurant kitchens and a stint in the corporate world after business school.
Her return to baking came through a pivotal moment at Zingerman’s Delicatessen, where she connected with the founder of what would soon become Zingerman’s Bakehouse. Joining the team as one of its original eight members in 1992, Emberling laid the foundation for what would become a lifelong contribution to the industry. In 2000, she rejoined the Bakehouse as a managing partner and has remained an integral force behind its growth and mission.
Leading with Vision and Integrity
One of the cornerstones of Emberling’s leadership is the use of a clear and actionable vision. Under her guidance, Zingerman’s Bakehouse has navigated major industry trends—from low-fat fads to the gluten-free movement—by staying rooted in purpose. She emphasizes that longevity in business comes from anchoring decisions to core values, not fleeting market demands.
In her role, Emberling has also remained deeply committed to mentorship and education. She champions the importance of developing talent from within and fostering a workplace culture that supports growth, respect, and hands-on learning.
Lessons for the Next Generation
Throughout her interview on The Perfect Rise podcast, Emberling offered insights for aspiring bakers and future bakery owners. She encourages emerging professionals to gain experience working in bakeries that reflect their values—whether through ingredient quality, operational excellence, or leadership approach. This, she believes, offers practical lessons that can prevent costly mistakes later in one’s entrepreneurial journey.
She also invites future business owners to reflect on their lifestyle preferences: morning or evening shifts, customer-facing or behind-the-scenes work, fast-paced urban environments or close-knit small towns. According to Emberling, sustainability in business begins with building a model that genuinely fits the life of its owner.
Shaping the Modern Baking Industry
Since the early ’90s, Emberling has witnessed—and helped navigate—an evolving food landscape. From analog operations to modern digital systems, and from relaxed inspections to today’s stringent food safety regulations, the baking industry has transformed significantly. Public food literacy has also grown, thanks in part to platforms like the Food Network. According to Emberling, this shift has made customer interactions more enriching and informed.
Another area where she aims to shift perception is pricing. Emberling speaks openly about the true cost of high-quality food—highlighting that ethical sourcing, fair wages, and environmental responsibility require intentional pricing models. At Zingerman’s Bakehouse, pricing reflects a deep commitment to people, process, and product integrity.
