Prova Gourmet, a French brand which has specialized in vanilla and ingredients for the food industry since 1946, is launching a new range of natural flavors featuring four tastes: cocoa, pistachio, hazelnut and coconut.
With the rising price of cocoa and the increasing popularity of costly raw materials, such as pistachio pastes, which are being used more and more frequently in on-trend recipes such as the Dubai Chocolate Bar, these innovative and affordable alternatives optimize production costs and provide natural flavors with authentic tastes to professionals working with pastry, chocolate, confectionery and beverage.
“Having mastered the art of blending to enhance flavor, we decipher the nuances of raw materials to reveal their full depth. Like perfumers, we carefully blend the molecules required to recreate each flavor’s complexity and authenticity. Our natural flavors are therefore a natural, affordable, and high-quality solution, offering an alternative to costly raw materials,” says Arnaud Monmarché, general manager of Prova Gourmet.
Developed by Tristan Rousselot, pastry chef at Prova Gourmet, these natural flavors are easy to use and enhance creams, ganaches, mousses, pralines, ice creams and more. Free from allergens, they offer an alternative to traditional raw materials, combining convenience and flavor intensity.
“This new range of natural flavors offers authentic flavor that stays true to the original raw materials. Each flavor reveals its full depth to enhance chefs’ and artisans’ creations with unique aromatic signatures. For example, the natural Pistachio flavor, inspired by Turkish pistachios, stands out for its intense toasted signature and subtle woody notes, creating an authentic flavor experience,” Rousselot says.
The use of Prova Gourmet natural flavors makes it possible to reduce the amount of raw materials used. Artisans can save up to 20 percent on the cost of flavoring by reducing the amount of cocoa powder used in a recipe by 30 percent and replacing it with 1 percent of Prova Gourmet natural cocoa taste flavor. Similarly, with only 1 percent of Prova Gourmet natural pistachio or hazelnut taste flavor, the amount of paste or powder can be reduced by 50 percent, leading to savings of up to 35 percent on the cost of flavoring.
