Be Happy Pie Company in Evansville, Indiana has mastered the art of the pie over the course of the last decade. Founded in 2015, the bakery is fueled by Jennifer Lamble’s passion, who loves bringing smiles to customers’ faces with her baking. In addition to sweet pies, the bakery also offers scones, cookies, coffee cake, kuchens, sweet rolls, petite cheesecakes, cookie pies and cream puffs, as well as savory pies including chicken pot pie, fiesta taco pie, shepherd’s pie and quiche.

That passion has led to a great deal of success for Be Happy Pie Company, which has opened a second location in Evansville and also began to franchise with its first location in Paducah, Kentucky.

With spring finally here, we asked Lamble what differentiates this pie season from the winter pie season, and what is popular with customers this time of year.

Bake: What flavors are typically popular with customers in the spring? Do you get input from them on what they’d like to see?

Key Lime, Coconut Cream and Strawberry! Strawberry season is certainly a fan favorite. We do like to hear feedback on what our customers want. Part of the experience at Be Happy Pie Company is the interaction, and we are always listening to and engaging with our customers.

What are your top-selling products during this season?

Lighter flavors and more fruits like Key Lime, Coconut Cream and Strawberry are more popular.

How does this compare to what is popular in the winter months?

The holidays drive a lot of our flavors during the winter, but they tend to lean towards heartier flavors like Apple, Pumpkin, Pecan and Cranberry Pear.  

What facilitated the decision to open a second location, as well as to franchise? 

Customer demand, feedback and the desire to grow the business and expand drove us to open a second location. I have always believed every town needs a Be Happy Pie Company, so it was a natural next step to work toward franchising what we have created in Evansville. Shipping pies are fine, but there is nothing better than walking into the bakery with all of the amazing smells and getting a scratch made, delicious pie!

Do you foresee there being any significant differences between Evansville, Indiana and Paducah, Kentucky (such as customer base and what type of offerings will be popular)?

I foresee our Bourbon Pecan/Chocolate Pecan and our Chess variants being more popular due to the more Southern nature of Kentucky and the surrounding area. For the menu in Paducah, we are going to focus on our pies (sweet and savory), scrappies, cookies, cookie pies, muffins and coffee to start. We plan to roll out some of our other offerings as time goes on. That's how we started in Evansville and then our customers started requesting other items like coffee cake, sweet rolls, etc. Being a scratch bakery is so much fun since we are only limited by our creativity. We are very excited to get to know the customers in Paducah!
