Opening a new bakery is not an easy thing, and not something that should be done without a lot of careful thought, consideration and, most importantly, a plan.

No one understands this more than Stacey Cole, owner of Delish, a new bakery in the town of Mena, AR. A Mena native, Cole made the decision to open her bakery after some major life changes brought her back to her hometown from Houston. Although she understands that it's especially hard to start a new business in a small town, she surveyed the potential for business, especially with wedding cakes. Before Delish, wedding clientele would make the hour drive north to Fort Smith for wedding cake consultations. Now brides have an option at home, and she can serve the neighboring towns, as well.

So far, so good - Cole is already booking up for the upcoming wedding season. Her shop has room to grow, and in the future, she's hoping to expand her menu to include lunch items including soups. But for now, she's focusing on her wedding cakes and other sweet treats, such as mini cupcakes, cake balls and muffins.
