It’s that time of year when family cookie traditions call out to us. The Soyfoods Council offers some tradition-worthy cookies that demonstrate simple ways to you can incorporate high-quality plant protein into favorite family recipes

Most great cookie doughs start with butter, sugar, eggs and flour. Things get even more interesting, though, when you add soy protein to the mix. Tofu provides smoothness, while textured soy protein (TSP, also called TVP or textured vegetable protein) provides crunch as a topping and ingredient.

Soyfoods offer the following amounts of complete plant protein per serving: silken tofu, approximately 8.5 grams; textured soy protein (TSP, also TVP or textured vegetable protein), 11-13 grams; soy nuts, 15 grams; soymilk, 7-8 grams. A complete protein contains all the essential amino acids necessary for human nutrition.

Toffee Bars—These bar cookies are spread with melted milk chocolate and sprinkled with chopped soy nuts. They’re simple to make, but offer a complexity of flavors and textures worthy of your holiday table.

Wonderful Sour Cream Cookies—The secret to the wonderfulness of these cookies is the blend of silken tofu and soy sour cream with dairy sour cream and butter. The icing seals the deal. It’s made with powdered sugar, vanilla soymilk, vanilla extract and almond extract. Candy sprinkles add the final festive note.

Holiday Oatmeal Apricot Cookies—Dried fruit, oatmeal, TSP and almonds make this a powerhouse of a celebration cookie. The cookies are richly flavored with apricots, cranberries and coconut flavor. The TSP adds crunch and a light caramelized flavor. They’re an ideal addition to holiday cheese boards, and an accompaniment for Soymilk Eggnog.
