Ingredients

Sweet Potato Pie Filling

  • Sweet potatoes, cooked and cooled, pureed  2 lb 4.00 oz or 4 cups
  • Yoplait ParfaitPro Lowfat Vanilla Yogurt  2 lb or 1/2 pouch
  • Brown sugar, packed  4 oz or 1/2 cup
  • Cinnamon, ground  2 tsp
  • Ginger, ground  1 tsp
  • Nutmeg, ground  1/2 tsp

Assembly

  • Nature Valley Oats 'N Honey Granola Cereal  8 oz or 3 1/4 cups
  • Yoplait ParfaitPro Lowfat Vanilla Yogurt  2 lb or 1/2 pouch

Directions

Sweet Potato Pie Filling

  1. Combine pureed sweet potatoes, yogurt, brown sugar, cinnamon, ginger and nutmeg in a large mixing bowl; stir until thoroughly combined.
  2. Refrigerate until needed, stirring before use.

Assembly

  1. Place 1/2 cup granola into 12 oz cup; add a #8 scoop Sweet Potato "Pie" Filling.
  2. Layer in 2 oz yogurt, an additional #8 scoop Sweet Potato "Pie" Filling, then 2 oz yogurt.
  3. Sprinkle on 2 1/2 Tbsp granola; cover with tight lid and serve cold.
