Italy’s quintessential Easter dessert, the Colomba is a traditional dove-shaped cake known for its soft texture and sweet almond flavor. According to popular legend, it was brought as a gift to King Alboin following the conquest of Pavia on the day of Pasqua in 572 AD, and was so light and delicious that he freed his enslaved and declared the dove — and the cake — a symbol of peace and renewal.
With over 140 years of experience, Olivieri 1882’s Colomba Classica is 100% handmade, and features high-quality ingredients such as Tahitian Bourbon vanilla bean, raw cane sugar, centrifuged Belgian butter and Italian acacia honey. The cloud-like sweet bread is then studded with finely chopped candied orange and topped with an almond, hazelnut, pine nut, and pearl sugar glaze.
