Each year, Datassential researches the food industry for flavor and ingredient trends, and the National Honey Board reports that fermented honey has been named as one of the key ingredients for 2021.
Most people think of beer when we’re talking about fermentation, but fermented honey, which has a high moisture content and is made in a warm temperature environment, can be used successfully in baking and food recipes as well.
So what does it taste like? It’s the perfect combination of tangy and sweet, according to the National Honey Board. It carries the trademark fermentation flavor profile, but backs it up with a subtle sweetness that can be used to provide complex flavor to a formula.
According to Datassential, fermented honey has the “potential to make it big” this year.
