Date Toffee Candy Apples

Serves 4

Ingredients

  • 3⁄4 cup pitted dates
  • 1 cup water boiling
  • 1 tbs coconut oil melted
  • 1⁄2 tsp ground cinnamon
  • 4 Granny Smith apples
  • 1 oz roasted whole almonds chopped
  • 1 oz 70% dark chocolate chopped
  • 4 bamboo skewers

Directions

  1. Place dates in boiling water and set aside for 15 minutes. Strain dates, reserving the liquid.

  2. Blend dates and half the liquid with coconut oil and cinnamon until smooth, scraping down the sides as needed. Transfer to a soup bowl and cool to room temperature.

  3. Spear the apple with a skewer and dip into the date-caramel mixture.

  4. Sprinkle over almonds and chocolate and refrigerate to set completely before serving.

  5. Alternatively, for a more kid-friendly snack, chop apples into wedges first, and serve with caramel dipping sauce, almonds and chopped chocolate on the side.
