In the upcoming new book Modern Sourdough, Michelle Eshkeri reveals how mastering the art of sourdough baking can open up a world of sweet and savory treats.

In 2016, Eshkeri opened Margot Bakery in a dilapidated shop in East Finchley, London. An instant hit, it became an experiment in pushing the boundaries of what a local bakery could be, by specializing in sourdough leavened pastries and sweet doughs alongside more traditional breads.

With photography from Patricia Niven and more than 100 recipes inspired by the authors’s Jewish and Australian heritage, Modern Sourdough expands the understanding of ancient baking techniques. The book includes a step-by-step guide to making a sourdough starter, as well as methods for folding, shaping, scoring and baking.

The book also demonstrates Margot Bakery’s signature loaves, as well as naturally leavened pizzas, challah, focaccia, French pastries, brioche, and babka.

Modern Sourdough by Michelle Eshkeri will be released on September 10, 2019 for the price of $35.00 in the U.S.
