Ingredients

Crust
Butter, unsalted, softened 6 oz 3/4 cup
Sugar, granulated 3.5 oz 1/2 cup
Molasses 3 oz 1/4 cup
Eggs, whole, large 8 oz 4 each
Gold Medal™ Variety Muffin Mix (11544) 2 lb 8 oz 1/2 box
Pumpkin pie spice 3 Tbsp
Pumpkin Filling
Pumpkin, canned 3 lb 5 oz 6 cups
Sugar, granulated 1 lb 2 1/4 cups
Eggs, whole, large 1 lb 8 each
Milk, evaporated 2 lb 4 oz 3 cans
Pumpkin pie spice 3 Tbsp
Bourbon 6 oz 3/4 cup

Directions

Crust

1. Cream butter and sugar in mixer bowl with paddle attachment on medium speed 2 minutes. Stop mixer; scrape bowl and paddle.

2. Add molasses and eggs. Mix on low speed 1 minute.

3. Add muffin mix and spice. Mix on low speed 1 minute. Stop mixer. Scrape bowl and paddle; mix 1 additional minute.

4. Press dough in bottom of greased or parchment-lined full sheet pan.
 
Pumpkin Filling

1. Place all ingredients in mixer bowl with whip attachment.

2. Mix on low speed 3 minutes or until incorporated.

3. Pour filling over crust, and spread evenly.

Bake

Convection Oven*      300°F    28-33 minutes
Standard Oven          350°F    33-38 minutes
 
Rotate bars baked in a convection oven (180°) after 10 minutes of baking.
