Mix the batter following the directions provided on the bag of Westco Ultra Rich Crème Cake Mix for a small batch.
For each 10 LB of batter, fold in 1 ½ LB of Westco Orange Fruit-O and 8 oz. of bread flour. If using fresh cranberries, add an additional 12 oz. of flour. Scale and deposit 2 ½ LB of batter into a well-greased 10" ring pan.
Bake at 330-365°F for 55-60 minutes or until internal temperature reaches 205°F. Let cakes cool for 20 minutes before removing from pans.
Let the cakes cool completely. Heat Westco Vanilla Dipping Icing to 105-110°F. Place heated icing into a decorating bag and drizzle over the top of the ring cake. Immediately garnish with dried cranberries before the icing sets.
Approx. Yield: 4 – 10” cakes (40 oz. each)
