Ingredients

4-5 medium apples, granny smith, diced small
1/2 stick butter, divided
1/4 c apple jelly
2 tsp cinnamon
caramel sauce
12 small tortilla shells, flour (6 inch)

Topping for the taquitos and to serve with

1-2 Tbsp butter, melted
2 Tbsp sugar
1 1/2 tsp cinnamon
ice cream, vanilla
chocolate sauce, (optional)
more caramel sauce, heat this up

Directions
 
1. Dice up your apples with or without skin on and then saute in a pan with 1/4 stick of butter. Once cooked down & softened add your apple jelly & cinnamon.

2. Take your flour tortillas and place a few in a damp towel and microwave for about 10 seconds or so... just to soften them up and make easy to roll. Drizzle just a little caramel sauce down the center of tortilla and add about 1-2 tablespoons of apple mixture & then roll up.

3. Melt down the other 1/4 cup of butter in your pan that you are going to cook them in. Place your rolled apple taquitos in pan tightly up against one another. Once finished brush a little melted butter on to the tortillas and add your blended cinnamon/sugar mixture for the topping. You want these to cook so they get a crispy on the outside and nicely heated throughout. About 20 minutes on 350 degrees.
