Gluten Free Creme Cake & Muffin Mix 1 / 25 LB  

Lady Ellen Gluten Free All Purpose Flour 1 / 25 LB   MIX

Add the following ingredients to the bowl:
Westco Gluten Free Crème Cake & Muffin Mix 5 LB
Whole Eggs 1 LB 12 oz.
Water 14 oz.

Mix 1 minute in low speed, 3 minutes in medium speed.

Add the following ingredients:
Oil 1 LB 8 oz.
Corn Syrup 4 oz.
Blueberries IQF 1 LB 4 oz.
Lady Ellen Gluten Free All Purpose Flour 8 oz.

Scrape and mix for 2 minutes in low speed.

To make gluten free streusel, mix the ingredients below until crumbly. Set aside:
Lady Ellen Gluten Free All Purpose Flour 4 LB
Butter or Margarine 1 LB 12 oz.

Deposit into muffin tins. Top with blueberries and gluten free streusel.

For 2-ounce muffins, in a Rack/Convection oven, bake at 320° for 35-40 minutes. If using a Reel/Conventional oven, bake at 350° for 40-45 minutes.

For larger muffins, extend the bake time by 20 minutes.
