This video demonstrates how to create almond square cookies.



5 Lb 3 Oz Brown Sugar 
3 Lb 14 Oz Unsalted butter, cool but not hard 
1 Lb 4 Oz Egg Yolks 
2 1/2 Oz Ground Cinnamon 
6 Lb 8 Oz Bread Flour 
2 Lb 10 Oz American Almond Sliced Blanched Almonds



Cream the brown sugar and butter in a mixer bowl with the paddle attachment without aerating just until blended.

Add the yolks and cinnamon. Blend well.

Add the flour and American Almond Sliced Blanched Almonds mixing just until the dough comes together.

Place a sheet of parchment on a bread board. Place a full-sheet cake frame on the parchment-covered board. Press the dough into the frame. Smooth the surface with a rolling pain.

Chill the dough for several hours until firm.

Score then cut the dough into 1 ½-inch-wide strips. Portion each strip into ¼-inch-thick cookies. Place the cut cookies spaced 1 inch apart on parchment-lined sheet pans.

Bake 375°F until crisp, approximately 15 minutes.
