A new bakery is set to open in the city of Wayzata, Minnesota in early February that will offer a sweet hybrid to customers.

The Cookie Cups specializes in its namesake, cookies baked in mini-cupcake pans. The idea was originally born from owner Nicole Bandklayder, who was baking at home without a baking sheet and substituted a cupcake pan.

She first gained a reputation for these cookie cups at farmers markets, festivals, and catering jobs. That grew into the need for a full brick-and-mortar business, which is scheduled for around February 1. The Cookie Cups will offer both sweet and savory versions of the treat.

The bakery features flavors such as chocolate chip, apple pie, fudge brownie, strawberry shortcake, red velvet chip, and an expanded savory line that includes Mac & Cheese Cups, Meat & Potato Cups, and Mom’s Cornbread Cups.

“Think of it as the cookies and milk of Starbucks but also this concept store where everything is in the shape of a cupcake,” Bandklayder says. “It’s a little kooky, a little quirky.”
