Ng makes the incredible works of art using chiffon cake, which is sponge-like in consistency. She began making them for her kids and their friends a few years ago, and has mastered the technique since then. She used chiffon rather than a butter cake because of the amount of sugar she’d have to use.
The cakes have brought her a great deal of attention, so much so that she has released two books on chiffon cake baking, and another on macarons.
