Callebaut names winners in Make It Special competition

Belgian chocolate brand Callebaut recently announced the winners of its Make It Special competition. Six chefs were chosen out of a large field and will win a trip to Belgium to delve deeper into the world of chocolate.

To enter the competition, chefs, chocolatiers, and pâtissiers were asked to demonstrate how they help their customers celebrate a special occasion. Gold, silver, and bronze prizes were awarded in both the 18-21 year old category and the 22 years or over category.

Pastry chef Dominic Hutchings of the U.K. was the winner of the 18-21 category, while pastry chef Eszter Takacs of New York won the 22 and over category.

Hutching’s winning entry focused on enhancing the senses with dessert, encasing distinctive aromas such as aged whiskey or coconut within for a surprise.

Takacs focused on garnishing her desserts using techniques such as tempered chocolate spirals, mousse piping, and edible gold leaf to reflect the flavor of the cake and express the importance of the occasion.

These two, along with the silver and bronze winners, have been rewarded with a trip to discover Callebaut’s Belgian roots, including a factory tour, a workshop at Callebaut’s flagship academy, and a trend tour to see the latest innovations in the chocolate capital of the world. The gold and silver winners will also receive varying amounts of Callebaut chocolate to use in their kitchens.
