In The Breadbox, a gluten-free commercial kitchen, will celebrate its grand opening on January 31, according to report by the Santa Cruz Sentinel. In The Breadbox is Santa Cruz County’s first certified gluten-free commercial kitchen. The bakery produces a variety of pizzas, breads, quiches, muffins, bagels, breakfast and lunch sandwiches, flour blends and more.

In The Breadbox launched several years ago when owner Jenn Ulmer Jenkins began providing wholesale gluten-free pizza crusts and hamburger buns to local restaurants. Her offerings have expanded to include gluten-free and dairy-free muffins, quiche, bagels and sweet breads sold at local coffee shops, according to the report.

According to the bakery, they use organic, natural and non-GMO ingredients whenever possible. Organic ingredients include fruits and vegetables, unbleached flour, sugar, yellow corn meal, coconut oil, olive oil, vanilla, honey, peanut butter, almond butter, chia seeds, flax seeds and pumpkin seeds. The bakery uses local cage-free and organic farm eggs from Glaum Egg Ranch.

The bakery’s Truffle Cakes have no sugar in the cake itself, although there is sugar in the frostings and fillings. Other sweets that are low in sugar are Samson & Delilah Truffles, Try Muffins, and Goin' Out West Corn Bread.
