On Sunday, February 8, in anticipation of Valentine’s Day, pastry chef Evan Sheridan will host the second in the Umstead Hotel and Spa’s Artisan Confections series of cooking demonstration, tastings and industry intelligence featuring Videri Chocolate Factory.

In keeping with the hotel’s quest to celebrate great local and regional purveyors, the event will shine a light on Sam Ratto, a partner in Videri, whose chocolate factory is located on W. Davie Street in Raleigh, North Carolina.

Staged in The Umstead’s Salon room, guests will be introduced to Ratto’s process of purchasing select beans from a handful of cacao plantations in Central and South America. These fair-traded and organic beans are turned into delicious, hand-crafted bar chocolate with the addition of cocoa butter and organic sugar. Next, Sheridan will use Videri’s 75% Trinidadian Chocolate to whip up a chocolate mousse, ideal for home entertaining.
