Bryan Sikora and his La Fia team are expanding their downtown presence in Wilmington, DE. The bistro celebrated its one-year anniversary in July, and had already outgrown its cozy space along lower Market Street that housed its bakery, restaurant and gourmet-to-go operations, according to a report in Delaware Today.

2014 James Beard Nominee Chef Bryan Sikora brings his vision of locally-sourced artisan cuisine to the creative LOMA neighborhood of downtown Wilmington. The bakery offers a variety of artisan breads (French Baguette, Golden Raisin & Walnut, Rustic Olive, Multigrain), as well as muffins, cookies, pretzels, gougeres, bagels and donuts.

With the opening of La Fia’s Bakery Annex at 823 N. Market Street this fall, Sikora and head baker Dominic Petruccelli can devote a 1,500-square-foot kitchen space to churning out La Fia breads, rolls and pastries, like French gougères. The annex won’t serve as a retail spot, but will supply the restaurant and La Fia’s growing wholesale business.

La Fia already delivers several bakeshop items to southeast Pennsylvania like the Whip Tavern, Philter coffee shop and SIW Vegetables. Sikora hopes to grow his wholesale business in Delaware. “As of now, I drop most things off on my drive home at night,” he says. “But we do see the opportunity for more local deals.”
